Add some sweetness to your day with a Fruity Lemon Fridge tart and Rosini Butter Cookies with Berries
360 g Rosini Butter Cookies with Berries
200 g butter, melted
90ml warm water 250ml
Coffee Creamer (Cremora)
1 tin condensed milk (385g)
125ml lemon juice
Fresh Raspberries Or use any berries of your choice
In a blender blend the biscuits to fine crumbs, add the butter and blend until the crumbs are well coated. Line your dish with the biscuit crumble and leave in the fridge to set for 20 min.
Mix water and coffee creamer until dissolved and no lumps.
Add condensed milk and stir.
Add lemon juice and stir until mixed well.
Pour the mixture onto the biscuit base and leave in the fridge to set for 60 minutes.
When ready to serve, decorate with fresh berries and ENJOY!
